Pea and ham soup

I love making soup. It's so simple and so delicious. There's really nothing quite like a good bowl of soup and a cheese sandwich to dip in it.

Today I made pea and ham soup with some leftover gammon that I'd cooked in the slow cooker yesterday. I had about a third of it left (I'd bought it from Aldi for £3.79).

• 1 leek
• 1 large potato
• a mug full of peas
• leftover gammon (diced)
• veg stock

Soften your potatoes and leeks in a saucepan over a low light. Add the peas and diced gammon. Pour on enough veg stock dissolved in water to cover the contents of the pan. I used a veg Oxo stockpot I got free thanks to Bzzagent (they are actually very tasty). Bring to the boil and simmer for about 20 minutes.

Allow to cool slightly then liquidise with a hand blender. Return to the heat. Serve hot with cheese sandwiches!

This recipe will serve 6 for lunch. 4 for a main evening meal.
